Oven Roasted Broccoli

A few weeks ago I was at the grocery store with my toddler, and he literally begged me to buy broccoli.  We had successfully walked past the apples, grapes, bananas, and blueberries without a peep, but the thought of walking past the broccoli without adding some to our cart was enough to put him into pre-tantrum mode.  I call this a #parentingwin.  And it was all because earlier in the week I had made oven roasted broccoli for dinner and he loved it.  This recipe is SO easy and simple to make that I just had to share it with you in case you are looking for a way to encourage your kids to eat their broccoli.

Oven Roasted Broccoli

Ingredients
Fresh broccoli – washed, dried, and cut into bite-sized pieces
Lemon wedge
Olive Oil
Salt & Pepper to taste

Directions
1.     Preheat the oven to 450 degrees
2.     Spread the broccoli in a single, even layer on a sheet pan
3.     Drizzle with olive oil and season with salt & pepper to taste; toss to coat
4.     Roast in the oven 16-20 minutes, stirring halfway through
5.     Sprinkle with the juice of one lemon wedge
6.     Enjoy!
